Creamy Pumpkin Soup

For babies 8 + months

Ingredients for pumpkin soup:

- 1 Large Onion

- Dash of Nutmeg

- 1 butternut pumpkin, peeled and cut in chunks

- 3 chicken stock cubes

- 1/4 cup Sour Cream

- 2 Carrots diced

- 2 cups half and half or evaporated milk – optional

- 1/8 teaspoon Pepper

- 1 teaspoon of Cinnamon

- 1/3 teaspoon( or less) Salt

- 1/2 teaspoon Baking Soda

How to make pumpkin soup?

First take a large pot. add chicken, onions, carrot, baking soda, pepper
and salt. Next, simmer uncovered for ten to fifteen minutes until you see
that carrots are soft. If you want you can put vegetables and chicken into
a food processor or blender and blend until smooth. After this add pumpkin
and half yogurt to the pot. Simmer uncovered for 10 minutes. Top with sour
cream if you want.

Warning: Remember that it is better not to cook pumpkin for a long time
because it looses it nutritious values.

Tip: You can store pumpkin in a plastic container for 1 week and up to 2
months in the freezer. Pumpkin can expand when frozen so allow for
headspace at the top of container.
